Pork Fried Rice
Ingredients
1 cup
brown rice
2
lean pork chops
3
egg whites, scrambled
2 cups
diced vegetables (carrots, celery, water chestnuts, onions, mushrooms, peppers, or anything that you like)
1-3 T
soy sauce
1 tsp
minced garlic

Description
The rice is a good complex carbohydrate, the veggies add color and vitamins, and the pork and egg whites are good protein sources. This is a great complete meal!!
Instructions
Spray wok or frying pan with non stick spray and cook cubed pork until no longer pink. Remove from pan and add egg whites and cooked rice together and cook on medium setting. Add soy sauce and garlic and continue to sautee together. Add vegetables and cook to desired consistency (I like my veggies crunchy so I don't cook them long), and add pork last.
Notes
Serves 2 people and has roughly 300-400 calories. Change the pork out for chicken, steak, or shrimp for variety.
