Swedish Meatballs
Ingredients
3/4 cup
plain dry breadcrumbs
1/4 cup
dry parsley
1
apple, cored, peeled, and shredded
2
egg whites
1 t
salt
1/4 t
ground nutmeg
1/8 t
allspice
1 1/2 lb.
95% fat free ground beef
4 t
cornstarch
1/4 cup
super skim milk
1 1/2 cup
beef broth

Meatballs are very low in fat, and they taste great!!
Instructions
Add breadcrumbs, parsley, apple, egg whites, salt, nutmeg, and allspice to bowl and mix. Add beef and mix well to make sure all ingredients get mixed in. Shape mixture into 1 1/2 inch meatballs. (Hint: get your hands wet so meat doesn't stick to them.) Coat skillet with non stick-spray and warm on medium. Add meatballs and cook thoroughly turning frequently so they don't burn. Transfer to plate. In a small bowl, mix cornstarch and 2 T of milk. Add broth and 2 T of milk to skillet and warm up. Add cornstarch mixture and heat for a few minutes, stirring. Return meatballs to skillet and reheat. Serve over noodles with sauce spooned over top, or serve as a stand alone at a gathering.
