Ingredients  
  • 12 ounces cubed ham
  • 1 red bell pepper, chopped
  • 1 cup super skim milk
  • 1 lb. frozen shredded potatoes
  • 1/2 cup reduced-fat shredded cheddar cheese
  • 1 t minced garlic

Description  This casserole is great for brunches and calories are low and healthy!!
Instructions  Spray 13X9 pan with non stick spray and preheat oven to 350°. Place frozen potatoes in pan, top with cubed ham, diced red pepper and garlic, and pour milk over mixture. Heat in oven for 45 minutes, mixing occasionally. Pull mixture out of oven and top with cheddar cheese. Turn oven off and heat on broil for 2 minutes until cheese gets crispy.
