Ingredients  
  • 1 lb. 95% lean ground beef
  • 1 packet taco mix
  • 1 head lettuce
  • 1 pint grape tomatoes
  • 1 cucumber, diced
  • 8 oz. black olives
  • 4 oz. shredded mozzarella (or cheddar) cheese

Description  Taco salad without the shell.
Instructions  Cook beef and drain fat off. Add taco mix and simmer. Meanwhile, cut up lettuce, tomatoes, and veggies and toss together. Add beef mixture to salad and toss. Sprinkle shredded cheese on top, if desired.
Notes  We all love nachos. This is a lower calorie alternative to our love of Mexican food!!
