Low-Carb Lasagna
Ingredients
8 strips
lasagna noodles
8 oz.
low-fat mozzarella
8 oz.
fat-free ricotta cheese
4 oz.
Parmesan cheese, shredded
2T
fresh parsley
1 lb.
95% lean ground beef (or turkey if desired)
26-30 oz.
spaghetti sauce
1 tsp
garlic, crushed
veggies, chopped (mushrooms, celery, onions, whatever you like)

Description
Here are some tips to cut down on the calories and carbs in your lasagna.
Instructions
Cook ground beef and drain any fat off. Add spaghetti sauce and 1 1/2 cups water and cook. Add garlic and continue to simmer. Meanwhile, mix mozzarella cheese, ricotta cheese, and Parmesan. Take 1 cup of the spaghetti sauce and put on the bottom of lasagna pan. Place 4 uncooked noodles down. Cover noodles with meat sauce mix, 1/2 of the cheese mixture, more of the meat sauce, second half of the cheese mixture, then 4 uncooked noodles and then cover noodles with the rest of the sauce. Bake covered for 45 minutes at 375° until cooked through.
Notes
Removing the middle layer of noodles will cut down on the carbs, and the rest of the lasagna is chock full of muscle rebuilding protein!! Serve with a salad (save the Texas toast for another time) and you have a complete meal!!
